I don't have an employees, but am considering bringing one in. The calculation I would use for them would depend on their skill level and speed. My number is based on the exact number of each service I have ever done in the salon (I am an OCD tracker) with my current service times plugged in, that's how I come up with my average time. To demonstrate - my percentages and times of each service performed is this:
3% Full Set 1.5 hr
7% Re-Tip 1.5 hr
1% Back Fill 1.5 hr
14% Fill w/Gel Polish 1.25 hr
26% Fill 1 hr
23% Gel Mani 1 hr
2% Spa Mani 1 hr
8% Gel Toes Dry Pedi 1.25 hr
4% Gel Toes Exprs Pedi 1.5 hr
4% Spa Pedi 1.5 hr
6% Xprs Pedi 1.25 Hr
1% Dry Pedi .75 hr
the other 1% is soak-offs & no-shows
So if I had someone new starting I would create a spreadsheet, plug in their service times for each service, then multiply it out - put in that they would perform 100 services, extrapolate the percentages, and you will then have an average service time. Of course, your percentages for each service will vary depending on your focus. 85% of the services I have performed involve acrylic, gel or gel polish - only 14% has been natural mani/pedi's! So for a newer tech who is slower it might look like this:

3% Full Set 2.5 hrs/svc --- 2.5 hrs --- 1.0 svcs
7% Re-Tip 2 hrs/svc --- 6.8 hrs --- 3.4 svcs
1% Back Fill 2 hrs/svc --- 0.6 hrs --- 0.3 svcs
14% Pill w/Gel P 1.75 hrs/svc --- 13.5 hrs --- 7.7 svcs
26% Fill 1.25 hrs/svc --- 25.7 hrs --- 20.6 svcs
23% Gel Mani 1.5 hrs/svc --- 22.6 hrs --- 15.1 svcs
2% Spa Mani 1 hrs/svc --- 1.9 hrs --- 1.9 svcs
8% Gel Dry Ped 1.5 hrs/svc --- 8.1 hrs --- 5.4 svcs
4% Gel Exprs Pedi 2 hrs/svc --- 3.9 hrs --- 2.0 svcs
4% Spa Pedi 1.75 hrs/svc --- 3.9 hrs --- 2.3 svcs
6% Xprs Pedi 1.5 hrs/svc --- 6.1 hrs --- 4.1 svcs
1% Dry Pedi 1 hrs/svc --- 0.7 hrs --- 0.7 svcs
64.4 total services
1.6 hours per service
